Colombian Sancocho is a traditional beef soup served with a side of avocado and white rice. The hearty soup is flavoured with herbs and made with potatoes, cassava, plantain, and sweet corn.
Sancocho originated in the Canary Islands and was brought to Latin America in the 16th century. The recipe slowly made its way around the continent and was adapted in each country to suit the local tastes and available ingredients. It’s not only specific to the area, but also to the individual chefs. Most cooks add their own twist to the traditional food.
Sancocho always consists of root vegetables and at least one kind of protein. Though closer to a stew, Colombian Sancocho is still considered a soup. It’s the ultimate Colombian comfort food.
